I’m a busy mum, looking after a toddler (Louis) and baby Theo, currently on maternity leave, but usually working as a food writer and freelance writer on raising a “green” family.

We signed up for our local organic box scheme when we first weaned Louis and I quickly realised that I didn’t know what to do with some of the random, unidentified vegetables that arrived each week!

If they were covered in my array of recipe books, chances were I wouldn’t have the other ingredients in stock.

So we had to get creative.

And we soon discovered how many other people were in the same position.

That’s why I launched VegBox-Recipes.co.uk.

It’s packed full of tried and tested recipes, specifically designed for UK-grown, seasonal ingredients.

Yes, you’ll also find recipes with non-UK ingredients, because it’s nice to treat yourself. But our main aim is to help you make the most of your veg box / farmers’ market / allotment and inspire you to try out some fresh ideas.

I’ve come across a fantastic veg box scheme in South Devon http://www.nearlynakedveg.co.uk. Great value for money – the box was absolutely brimming. I’m a definite convert and the Sunday roast boxes offer fantastic value for money. I’ll just have to try and learn to cook a bit better so all these fab recipes are perfect!

I have found more ‘ways’ to store potatoes then I think there are ways to make potatoes! Can anyone tell me a reliable, ‘tried & true’ way to store these lil spuds ? Any ideas/suggestions are appreciated. Thanks!
